More Recipes.

Spicy Orange chicken (adapted from Tamela Sharp)




4 chicken breasts
1 beaten egg ( I used egg beaters)
1 Tbsp water
1/4 cup cornstarch ( I also added 1/2 tbsp cayenne pepper)
2 Tbsp margarine
1/2 cup brown sugar
1/4 cup soy sauce
1/2 cup orange juice
1/4 cup vinegar
1 Tbsp cornstarch in 2 Tbsp water ( added another 1/2 tbsp cayenne pepper)

preheat oven to 350. Cut up chicken into 1 inch pieces. Dip Chicken in egg wash made of beaten egg and water, then coat with cornstarch and cayenne pepper mix. Brown in margarine until golden brown (and cooked) and place in casserole dish. combine remaining ingredients except cornstarch and bring to boil. add cornstarch slurry with cayenne pepper as needed for a thin sauce. Pour over chicken pieces and bake, covered, 15 minutes and then uncovered for 10 minutes. Yield 8 servings.

Healthy Banana popsicles



Lowfat yogurt
granola
bananas

Cut bananas into halves, dip into lowfat yogurt and roll in granola. Place on wax paper in a sealable container. Freeze for at least 2 hours. Only 60 cals a piece!
