I am so excited for Thanksgiving- The desserts will make their appearance Thanksgiving day. I still have yet to finish my Amish Friendship Bread (which will be ready to be baked on Wednesday), make Caramel Corn ( my secret family recipe-this one on all recipes is pretty similar to the one i have), Darin's Orange Pumpkin Soup (super delicious), possibly make some home made sour dough bread/rolls and maybe even some homemade stuffing. Some family will be getting together with Andy and I to have Thanksgiving together- so I don't need to get a turkey, but I would like to get one just so that we can have lots of turkey left overs...yumm yumm...

Darin’s Orange Pumpkin Soup
* Chunks of fresh pumpkin (~1lb)
* Two medium golden onions
* 8 cloves of garlic
* A good chunk of peeled ginger
* One orange with non-bitter peel
* Milk
* Red bell pepper sautéed in Olive oil
* Apple cider vinegar
* Salt and pepper and brown sugar
* Cinnamon, nutmeg, Garam Masala (recommended-an Indian Seasoning) and a little Turmeric for added color
* Coriander seeds (or mustard seeds)
* Corn
* Toasted pumpkin seeds
* Steam chunks of pumpkin in minimum water for 15 min. then cool with ice cubes. Do not drain the vitamin-containing water.
* Blend up cooled pumpkin, onions, garlic, ginger and chunked orange (with some peel) in blender with enough milk to emulsify.
* Slice a few more thin chips of pumpkin and boil in 1.5 cups of water for 10 min with coriander seeds (or mustard seeds) (can do this with first step)
* Pour in puree and simmer ~10-15 min
* Add salt, vinegar, cinnamon, and nutmeg to taste.
* Add brown sugar to taste (may be about half a cup)
* Garnish with your favorite cheese and toasted pumpkin seeds or pinenuts. And serve with toasted bread.
Oh and I am a little sad about the BYU vs UT game- us Cougars need to learn how to catch a ball and how not to throw it the opposing team- that might help a bit- Although I did get a lot of reading for grad school done during it..so I guess us losing had it's up-side
Well now I must go running to burn off the calories I consumed while baking:) I love baking:)
Then I have another 20 million things to do before I go to bed. My next post should be about our Thanksgiving. I hope everyone has an awesome holiday!
