Baking and Other Updates!

I made my daddy-o some shortbread cookies for his birthday! He was a very happy camper!

It is my turn to throw the work BBQ and we are doing Kabobs....I took care of the veggies and the melon salad. My partner in crmie took care of the meat, rice and dessert... (since everyone gets a lot of my desserts all the time).

I want to make this and this in July for some birthdays coming up...mmmm...and this for my friend/cousin/sister/twin for her birthday.

I really would like SOMEONE to make this for me :) on my birthday :D My work is doing fondue for me...I love how I have arranged my whole birthday already...lol

I am planning on going indoor skydiving and then out to dinner at the Mayan as I have never been and I know some of the performers.


Other news:

-My mom moved back from Mexico to Idaho....sigh...
-My sister moved to Maine with my dad, step-mom and their daughter....she and her boyfriend are on a break...or something
-My husband is sexy
-I love Pole dance and silks and hoop...the trapeze is still growing on me- I am getting stronger every day...I even have an ab (as my husband would say)
-I almost quit my job yesterday (long story) or flew out to Maryland to get all Jihad on some Rexahn people (they owe us 40K)

-I did not do the breast cancer walk, but am still planning on doing a tri as well as the Red rock Relay

MMMM....CAAAAAAAAAAKE!


I made this lovely little number for birthday's last week :D

The frosting is 2 jars of whipped whipped cream frosting and 1 large tub of whipped cream mixed together.

Then you just decorate with the fruit you want!

Since I used a bunt pan I filled the inside with a nice little fruit salad!

I also made Protein popcorn for a movie night and it was yummy.

Saturday we had a party to go to so I made Pillow Cookies and Nels' famous bean dip.

Nels' bean dip:
2 8 oz packages cream cheese
1 large jar of green salsa
2 cans of bean-less chili
shredded cheese

1-Cut up the cream cheese and place in the bottom of a glass dish.
2-Pour the bean-less chili.
3- add shredded cheese to cover it all.
4-Pour the green salsa over it all.
5- add a little more cheese.
6- Bake at 350 for 25 minutes and then serve.

And then Sunday we had crepes...mmmm...crepes.....with homemade whipped cream....nutella...fruit...powdered sugar...hazelnut....and coconut!


Why all the baking of unhealthy things?

We had a friend come and visit us...one of Andy's old mission companions....it was fun to hang out with him.

Things I made this weekend.

Lava Pudding

Sift together in a bowl:
1 cup flour, 1/4 tsp salt, 2 tbsp cocoa, 2 tsp baking powder, 3/4 cup sugar.
Stir in:
1/2 cup milk, 2 tbsp melted butter, 1/2 cup walnuts.
Spread the above mixture in a 9" sq pan.
Mix: 1 cup brown sugar, 4 tbsp. cocoa.
Add: 1-3/4 cup hot water and pour mixture over batter in pan
Bake at 350 degrees for 45 minutes. During baking, cake mixture rises to top
and chocolate sauce settles to bottom. Invert squares of pudding on plates, dip sauce
from pan over each. Serve warm or cold with or without whipped cream or ice cream.


Texas Sheet cake


For both of the above recipes I used dark chocolate cocoa powder. I didn't add marshmallows and added coconut to the Texas sheet cake...super tasty i must say!

Curry Spice noodles

I made a few changes....no lemon grass (couldn't find it), used whole wheat spaghetti, used sesame seed oil instead of peanut oil and added some sesame seeds...easily feeds at least 4 but hubby ate it all...and I had 1 serving.

I haven't had time to calculate nutrition facts but I am sure it isn't more than 3-400 cals per serving....
