I tried Pumpkin Agave muffins this weekend.....
Yummy...
My changes:
I used all whole wheat pastry flour
I didn't add the salt
I used 2 tbsp coconut oil instead of 4 tbsp butter
I am pretty sure I used the whole 3/4 cup agave....not positive lol...lost count...so I might have only used 1/2
I used 1/4 cup egg whites instead of 1 egg
and I used 1/2 cup chopped pecans raw instead of the 1 cup toasted walnuts
The dough was kind of thick because I was using whole wheat flour so I added about a 1/2 cup water to thin it out so it had more of a muffin like consistency
I also added 1 chocolate melting chip on top of each of the muffins...I think they are pretty tasty myself...
